Operational Group 2021 – SAFETY.TOOL
BOADAS 1880, as a beneficiary member of the operational group, together with INNOVACC, as a non-beneficiary member, and IRTA, as a technology centre, are carrying out this project, which aims to develop a new tool based on predictive microbiology and computed tomography to assess the food safety of the production process for cured ham without nitrifying agents and with reduced salt.
