BOADAS has received a grant whose main objective is to develop strategies and protocols to eliminate and/or mitigate risk factors for potential mycotoxin formation in the production processes of the specified cured meat products.
Participants: ESTEBAN ESPUÑA (Leader), BOADAS 1880 and SUCESORES DE J.PONT (beneficiaries), ARGAL, JAMONES LLÉMENA and RAMON VENTULÀ (non-beneficiaries), Institute of Agri-Food Research and Technology (IRTA) (OPI), Business Federation of Meats (Contracted), and Innovacc Catalan cluster of meat and alternative protein (Coordinator).
