BOADAS 1880, with the support of ACCIÓ and the Generalitat de Catalunya, has been the beneficiary of a grant to study the feasibility of implementing a tool based on predictive microbiology models, using the large volume of data generated to ensure the quality and food safety of cured ham without nitrifying agents.
